A creamy, hearty chicken chili with a little kick from Hank Sauce Cilanktro. Packed with protein, fiber, tender shredded chicken, beans, corn, poblano peppers, and a creamy cottage cheese finish, this is an easy weeknight meal that comes together right in the Crock-Pot.

1½ lbs boneless, skinless chicken breast
3 cups chicken bone broth
4 oz reduced-fat cream cheese
1 yellow onion, diced
2 poblano peppers, diced
4 cloves garlic, minced
1 (15 oz) can cannellini or Great Northern beans, drained and rinsed
1 cup corn
½–¾ cup Hank Sauce Cilanktro, plus more to taste
½ cup salsa verde
½ cup shredded sharp cheddar cheese
¾ cup 2% cottage cheese
1 tsp smoked paprika
1 tsp dried dill
1 tsp cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp salt
½ cup fresh cilantro, chopped
Juice of ½ lime
Add the chicken, bone broth, cream cheese, onion, poblano peppers, garlic, smoked paprika, dill, cumin, garlic powder, onion powder, salt, and black pepper to the Crock-Pot.
Give everything a quick stir, keeping the chicken submerged in the broth as much as possible.
Cover and cook onLOW for 5–6 hours orHIGH for 3–4 hours, until the chicken is cooked through and reaches an internal temperature of 165°F.
Remove the chicken from the Crock-Pot and shred it with two forks.
Return the shredded chicken to the Crock-Pot and stir to combine.
Add the cannellini beans, corn, Hank Sauce Cilanktro, salsa verde, and shredded cheddar cheese.
Stir well to incorporate the melted cream cheese into the broth.
Cook onHIGH for another 20–30 minutes.
Blend the cottage cheese until smooth.
Turn the Crock-Pot toWARM or OFF and stir the cottage cheese into the chili.
Finish with fresh cilantro and lime juice.
Taste and add more Hank Sauce Cilanktro if desired.
Top with fresh cilantro, an extra drizzle of Hank Sauce Cilanktro, shredded cheddar, or a squeeze of fresh lime.
