Preheat oven to 375°F. In a small bowl, mix brown sugar, Hank Sauce Honey Habanero, maple syrup, and smoked paprika. Arrange bacon on a wire rack over a foil-lined baking sheet. Brush generously with the mixture. Bake for 20–25 minutes, or until bacon is caramelized and cooked through. Let cool slightly to allow the glaze to set.
In a small bowl, whisk together mayonnaise, Hank Sauce Cilanktro, lime juice, garlic, and salt until smooth. Refrigerate until ready to use.
Whisk eggs, milk, salt, and pepper in a bowl. Melt butter in a skillet over medium-low heat. Add eggs and gently scramble until just set but still soft. Remove from heat.
Reduce oven temperature to 350°F. Keeping the Hawaiian rolls connected, slice the entire slab horizontally. Place the bottom half in a greased 9x13-inch baking dish.
Spread a generous layer of Cilanktro aioli over the bottom rolls. Layer with cheese, scrambled eggs, and candied bacon. Place the top half of the rolls over the filling.
In a small bowl, combine melted butter, honey, and garlic powder. Brush evenly over the tops of the rolls. Sprinkle with everything bagel seasoning if desired.
Cover loosely with foil and bake for 10 minutes. Remove foil and bake for an additional 5–8 minutes, or until the tops are golden brown and the cheese is melted.
Let cool slightly, then pull apart and serve warm with extra Cilanktro aioli for dipping.
