- 4 tomatillos diced
- 2 ears of corn cut from the cob
- 2 small sweet peppers diced
- 1 tablespoon of fresh ginger finely diced
- ¼ cup of Cilanktro Hank Sauce
- 1/8 cup olive oil
- 1 tbsp. of Hank Dry Rub seasoning
- 1 lime juiced
- 4 garlic cloves finely minced
- Mix all ingredients in a medium mixing bowl and allow approximately one hour to chill.
- Serve with chips (blue corn is a great option!) or load up some fresh tacos!
