2 tbs Unsalted butter
3 Tbs Flour
1/2 cup milk (room temp-warm)
3/4 cup Dark Ale (room temp)
1 tsp dry mustard or dijon mustard
1 tsp worchestershire
2 tbs Herb Infused Hank Sauce (or favorite flavor)
12 oz cheddar cheese grated
Over medium heat melt butter.
Add flour , cook stirring constantly for 2 mins.
Slowly whisk in warm milk and beer and increase heat to med-high, bring to a simmer. Add mustard, worchestershire and Hank Sauce. Cook, whisking occasionally until mixture thickens for 3-5 mins.
Work in cheese slowly, adding a handful at a time until each handful melts.
Season with salt and pepper, serve immediately w crostinis or chips of choice.
